Beyond Burger, or Gardein brand Garden Burger (gluten free), Gardein Beefless Burger (not gluten free)
2 onions, sliced
16 oz white button mushrooms, sliced
1-2 slices of vegan cheese, Follow Your Heart brand Smoked
Gouda works great!
spicy brown mustard
Your favorite bread
Nutiva Shortening (optional) to grill the bread
For the mushrooms:
1/2 tsp smoked paprika
salt and pepper to taste

First, cook down the sliced onions in some olive oil and a little bit of salt. The slower the onions are cooked, even as long as 45 minutes on low heat, will make it worth the wait (see YouTube video for a visual). This takes some patience, and needs to be stirred often. I often cook a few onions and keep them in the refrigerator until I need them to make it easy. They do not have to be cooked this long.
Cook them based on how much time you want to really want to spend with them. Dicing the onions, and cooking over medium heat for 5-10 minutes works too!
Next cook the sliced mushrooms in some olive oil or Nutiva shortening with 1/2 tsp smoked paprika, and some salt and pepper to taste. Mushrooms cook down a lot, so don't add too much salt, maybe 1/4 tsp to start. You can always add more salt at the end.
These two can be prepped ahead of time, and kept in the refrigerator until they are needed. After this, everything goes quick.
Cook however many burgers you need according to the directions on the package. I have only cooked them stove top with a little olive oil, and they taste great!
Grilling the bread makes a big difference in taste. Put a little Nutiva Shortening on one side of each slice of bread, and cook over medium heat in a pan until crispy, about 1-2 minutes.
Once the bread is done, place a slice of vegan cheese on the bottom slice. Place a hot burger on top of the cheese.
On top of the burger, add a little spicy brown mustard, grilled onions & mushrooms, sauerkraut, and an optional extra slice of cheese! Top it with the other slice of grilled bread, and enjoy!
