Falafel (vegan & gluten free)



2 cans of garbanzo beans

1/2 cup garbanzo bean flour, Bob's Red Mill brand

1/2 tsp baking powder

1/4 tsp baking soda

1/2 tsp salt

1/2 tsp garlic powder

1/2 tsp smoked paprika

1 tsp ground cumin

1/4 tsp pepper

1/4 tsp ground coriander

1 sliced green onion

1/4 cup chopped parsley

Juice of 1 lemon & water to equal 1/3 cup total


Avocado, tomatoes, basil, and pita bread to serve.

Drain and rinse the garbanzo beans, and place them in a bowl. Mash them up well with a potato masher.


In a small bowl, combine the garbanzo bean flour, baking powder and baking soda, salt, pepper, garlic powder, cumin, paprika, and the coriander. Mix those ingredients well, and add to the mashed garbanzo beans. Pour in the lemon juice/water, and mix the ingredients well by hand. Next, carefully mix in the green onions and parsley.


This dough will make between 12-16 small patties. Brown the falafel patties in some olive oil for 2-3 minutes per side. Finish by baking them in the oven at 350 for 10 minutes. The frying is not long enough to cook them through.


Place some falafels in a Pita bread with some avocado, tomatoes, and basil.
