Chocolate Chip or Vanilla Cookies (Vegan & Gluten Free)

These gluten free cookies seriously taste just like smores when they are hot & right out of the oven!

 

They also do not crumble apart, and very quick to make!

Dry Ingredients:

 

2 1/2 cups gluten free all purpose flour ( I used Arrowhead Mills for this recipe)

1 TBS egg replacer (Pamela's Not Xanthan works great)

1 tsp baking powder

1/2 tsp baking soda

 

Wet Ingredients:

 

1 can Nature's Charm sweetened condensed

          coconut milk

1 cup vanilla coconut sugar

2 tsp vanilla

1/2 tsp salt

 

1/2 cup of Enjoy Life vegan chocolate chips (leave them out if you want vanilla cookies

Sift all the dry ingredients together and remove throw out any clumps.*

 

In another bowl, mix the wet ingredients together. Let this sit for about 5 minutes for the coconut sugar to dissolve.

 

After that, mix the dry and wet ingredients together with the chocolate chips. It will be thick, and may need to be mixed by hand.

 

Let the dough sit for at least 20 minutes if you're in a hurry, or let it rest in the refrigerator for a few hours so it won't be sticky.

 

Take about 2 TBS of dough, and flatten it out to about 1/4" thick. Bake at 350o for about 12 minutes on some parchment paper or something non-stick.

 

Don't let them get too brown, gluten free flour doesn't seem to taste excessively burned it it cooks to long.

 

*Sometimes this flour has some clumps in it. I believe it is inulin that bound together. I like this flour a lot, and have contacted Arrowhead Mills about what exactly it is, and awaiting a response.
