Banana Bread (vegan)

Dry Ingredients

1 2/3 cups flour

1/2 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

Wet Ingredients

1 cup sugar

4 ripe medium bananas

1/3 cup water

1 TBS egg replacer

1/3 cup of oil

1 tsp liquid lecithin (approx)

1 tsp vanilla (optional)

1 TBS vinegar

Preheat oven to 350o F

 

In a mixing bowl; sift and combine the dry ingredients together, and set aside.

 

Mix the oil and lecithin together in a small glass. Set aside

 

Mix the egg replacer and water together in a different dish or glass. Use a whisk or a fork to help break apart any clumps. This should sit for a few minutes for the egg replacer to thicken.

 

Now it is time to place all of the wet ingredients into a blender. Blend until smooth. Add the blended wet ingredients to the dry ingredients, and whisk it together.

 

This is enough batter to make 12 muffins, or 1 loaf. Bake for 20-25 minutes for the muffins, and about 50-55 minutes for a 9" loaf pan.

 

A  tooth pick will come out clean when they are done.
